Fluffy and crunchy rice balls

INGREDIENTS

  •  200g Bali Parboiled Rice
  • 2 tbsp. butter
  • 1 egg yolk
  • 200g grated cheese
  • 2-3 slices of smoked ham or turkey
  • 1 tsp. oregano
  • several sprigs of fresh mint
  • 1-2 tbsp. finely chopped dill
  • some paprika, salt & pepper
  • 3 spoonfuls of breadcrumbs
  • 1 beaten egg
  • breadcrumbs for breading

 

DIRECTIONS

Boil the rice, strain it and mix in 2 tbsp. of butter. Add the egg yolk and mix well. Then add all the other ingredients. Chop finely several fresh leaves and add to the rice mixture. Put the mixture in the refrigerator for several hours to firm up and when it is ready, form balls in the size of a walnut. Dip the balls in beaten egg and then in breadcrumbs. Arrange them on a tray lined with baking paper and bake in a pre-heated oven, using the fan oven function, at 180 degrees for 40-45 min, until golden brown!
