Bali Rice with vegetables and prawns

INGREDIENTS (for 5 people)

  • 250g Bali Basmati Rice
  • 5 carrots 
  • 5-6 spring onions
  • 5 small red peppers
  • 150g prawns
  • 5 tsp. oil
  • 500ml water or stock
  • 2-3 tsp. curry powder
  • 2-3 tsp. vegetable stock
  • 5-6 tsp. soya sauce
  • πιπέρι κόλιανδρο ή μαϊντανό και λεμόνι

DIRECTIONS

Let the rice boil in salted water over low heat for approximately 20 minutes. Clean and wash the vegetables and cut them in small pieces. Rinse the prawns and let them dry. Heat the oil in a pan. Fry the prawns for a while and let them rest. Fry the vegetables and rice in the pan for approximately 5 minutes. Add the curry powder and let the ingredients cook. Add 500ml water or stock and bring to a boil. Add the prawns and turn up the heat. Add soya sauce, pepper, some salt and curry powder. Garnish with coriander leaves and lemon wedges.
